However, achieving a truly exceptional long black requires attention to detail and a consistent brewing method. This guide outlines a cafe-style approach to preparing long blacks, focusing on key techniques for optimal flavor and efficiency.

The foundation of a great long black lies in fresh, high-quality coffee beans and precise grinding. We recommend using a single-dose grinding setup, where each dose of coffee is weighed out and ground fresh for each cup. This approach offers several advantages:

  • Enhanced Flavor: Grinding fresh ensures maximum flavor and aroma.
  • Reduced Waste: You only grind what you need, minimizing waste.
  • Improved Consistency: Single dosing allows for precise control over grind size and dose.

Key Equipment and Preparation:

Brewing the Long Black: Step-by-Step:

  1. Prepare the Water: Heat filtered water in your kettle to the desired temperature. We recommend 75°C (167°F) for optimal flavor extraction, but adjust to customer preference if needed.
  2. Grind the Coffee: Weigh out your desired dose of coffee (we use 23 grams for our East Timor coffee) and grind it fresh using your single-dose grinder.
  3. Prepare the Cup: Fill the cup with hot water, leaving a small space at the top.
  4. Pull the Espresso Shot: Pull a double ristretto directly over the hot water, aiming to keep the crema intact on top of the water. Avoid letting the espresso mix immediately with the water. The quick shot time mentioned in the video suggests a coarser grind or other dialing in may be required to achieve desired extraction if you are not getting a ristretto.
  5. Serve Immediately: Serve the long black immediately to enjoy the full flavor and aroma.
